Dried salted fish is a traditional dry-cured that sprinkled with salt before the curing process. With unique flavor as well diverse varieties, popular among consumers worldwide. The presence of various microbial communities during process leads to numerous metabolic reactions, especially lipid oxidation and protein degradation, which influence formation substances. However, industrial curing, quality difficult control, leading products flavors.
